How To Make Hollandaise Sauce

Recipe Holondaise sauce

Yield : 0,5 liter

Ingredient :

  • 10 gr crush black corn
  • 50 ml wine vinegar
  • 20 gr slice shallot
  • 4 pcs egg yolk
  • 500 ml clarified
  • Salt & pepper

Method of cookoing :

  1. Reduce crush black pepper corn and shallot by wine vinegar, remove from the heat and let cool
  2. Strain and place in the clean bowl
  3. Add salt & pepper
  4. Add egg yolk, and whisk continuously on a bain marie into sabayon
  5. Pour the melted butter drop by drop whisk continuously until became thick sauce
