How To Make Brown Stock

Name : brown stock

yield : 3 ltr

Ingredient :

  • 2 kg beef or veal bones
  • 4 ltr water
  • 250 gr onion
  • 125 gr carrot
  • 125 gr celery
  • 1 tsp black pepper corn
  • herbs (leek, thyme, rosemery, parsley, bay leaf)

method of cooking :

  1. set oven 220°c 
  2. put the bones in a roasting pan, and cook in the oven for 20 - 25 minutes until brown on all side
  3. melt the butter in stock pot and saute the mirepoix until browned
  4. add the bones, and remaining ingredient
  5. add water and bring to the boiled and skim the surface
  6. simmer for 2-3 hours
  7. cook slightly, than strain allowed to cold
